I am finding the address book for sending emails incomplete and very difficult to use!!!

Every time I try to send an email, it pulls up Contacts. When I click on the person I want to send it to, it ALWAYS deletes the first letter of the persons name, then it comes back as UNDELIVERABLE. SO ANNOYING!!!!!!!!
